This is a recipe for classic Roast Beef cooked on a ProQ Smoker. It's simple and delicious.

METHOD

STEP 1

First of all, Light your ProQ Smoker, take your beef roasting joint and lightly rub it all over with English Mustard, then season all sides with a mix of finely ground black pepper and salt, or our ProQ Beefy BBQ Rub.

STEP 2

Put the joint on the smoker at 225°F (100°C), and add your ProQ Smoking Wood Chunks. with the water pan in place and its set. Check the smoker every hour or so and top up your fire and water if needed.

STEP 3

Remove the joint when it reaches your desired temperature: Rare 50°C (125°F), Medium Rare 55°C (130°F), Medium 60°C (140°F), Medium Well 65°C (150°F) and Well 70°C (160°F). Allow to rest for around 30 minutes.

STEP 5

Serve and Enjoy.
